Casper Eggplant

Description:

Casper Eggplant is a rare and beautiful Japanese white variety with long, slender, creamy-white fruits that are as elegant in the garden as they are on the plate. The flesh is notably tender, small-seeded, and mild free of the bitterness that sometimes accompanies purple eggplants making it exceptional grilled, roasted whole, or incorporated into stir-fries and curries where a delicate, silky texture is welcome. A striking, conversation-starting variety for adventurous gardeners and cooks.
